Last night I made Chicken Normandy for dinner. It took, of course, somewhere around three times the time I thought it would to make. That’s ok, though, because it was pretty awesome in the end.
Found the recipe on Simply Recipes, which may be one of my new favorite sites. Yay for lots of cooking happening this week! I’ve found at least four recipes I want to try sooner rather than later.

I had never heard of Chicken Normandy, had to go look it up. Sounds simple, yet scrumptious. The recipe I looked at used Applejack, something I’ve been meaning to try out in the making of apple pies as per Alton Brown. Learn something new every day…
according to my mom, who called me this afternoon just to tell me, the gravy/sauce is absolutely amazing leftover on top of any sort of chicken and green beans. so there’s that as well.
